Roma tomatoes are bright red, pear or egg shaped plum tomatoes highly prized for their firm, meaty flesh and low water content. Because they are not very juicy and have fewer seeds, they are the gold standard for cooking down into rich, thick sauces, pastes, and salsas, as well as for canning. They have a balanced acidity with concentrated sweetness that intensifies when cooked.
The plants are determinate, meaning the bushes grow to a set height (about 3 to 5 feet) and produce a massive, concentrated harvest over a shorter period.
Maturation: Typically ready for harvest in about 75 to 80 days from transplanting.
